Merry Christmas!


I remember a Christmas Story in one of Laura Ingalls Wilder's Books.


Their Pa had gone out in a terrible storm. He was supposed to be home with needed staples (food) and was late. They weren't even sure what day it was, but they were not too concerned with that. What they wanted was their Pa's safe arrival home. He did, indeed come home on Christmas day. He'd been detained because of the horrific storm.
They were overjoyed that their Pa was safely home with the help, I think, of their neighbor, Mr. Edwards. They had a simple dish that they were so happy to have and Pa brought them a single candy stick each. They were happy with it. That winter was cruel and daunting for them, but they made it. Their family stayed true to each other. Of course their need existed, but the simplicity of the story comes back. I haven't seen a life like that. Simply, primal with necessities that preceded anything we know, but still, simply elegant in the imagination, their simplicity of a season and a holiday.

I may not have the exact details of the story; or be even close, I do apoligize if this offends. Otherwise, I am happy to share my simple and sacred imagining. I couldn't find my old book to be sure of her words compared to my memory of that particular story, but the nature it brought me exudes life.

Lakewood police officer pens Christmas story

A little boy and his toy dinosaur who came by the Lakewood Office Department station Sunday to honor the four slain police officers touched an officer enough that the officer wanted to share it with friends.

One of the friends who received the letter, Tukwila police officer Mike Murphy, said he and his fellow officers were so touched by the story that they thought it should be shared with the community.

Murphy said the officer who wrote it agreed but wanted to remain anonymous.

"It is just a story of one child reaching out and helping heal the pain we have all suffered," Murphy said in his e-mail. "Our only goal in sending it is to reach out to our community and thank them for this and all the other love and support they have sent us through this very difficult time."

I’m not much for writing Christmas letters, and in fact this year, I didn’t even feel like making the effort of buying and addressing Christmas cards at all. I’m sure you all have heard of the terrible tragedy that occurred here in Lakewood two weeks ago today – four of our officers, four people that have become my friends over the past 5 years as we all worked here together, were gunned down as they sat in a coffee shop. Three fathers and a mother – all of whom were dedicated to their jobs and their families – now dead. The grief at our station and in our community has been overwhelming and we have all now just barely begun to process what this means for our department and for police departments all across our state and nation. Several times since this event happened, police agencies have responded to reports of individuals across King and Pierce Counties causing commotions and claiming to be planning to kill more officers. We do our best to maintain our composure and continue to do our jobs the best that we can.

It is hard not to remain bleak and jaded with these events so fresh in our minds. But something happened today, just 20 minutes ago, which made me want to send out a Christmas letter. I’m here at work and was just out in our secure parking lot helping another officer load collection bins into his car to take to a local Lakewood Police Independent Guild fundraiser event. I heard a woman, standing with a boy who couldn’t have been more than 3 or 4 years old, calling, “Excuse me….” through our locked gate. She had apparently been trying to get to our front counter but found no one there, it being Sunday, and had just happened to see us in the parking lot. I walked over to her and saw that the little boy was holding a plastic baggy containing a dollar and some change, and was clutching a well-worn stuffed dinosaur.

The woman told me that her son, AJ, had seen the stories on tv about our 4 slain officers. She said that they had driven to our station all the way from Kingston because her son was so intent on helping the children of these officers. I opened the gate and the boy handed me the plastic baggy containing all the money from his piggybank and a note on which he had written “AJ….From me to Pleec. I Love You.” And then, with tears in his eyes, he handed me his stuffed dinosaur. AJ’s mom explained that he wanted to give the children of the slain officers the most precious thing that he owned, and that was his dinosaur, Bruno.
I told AJ that I would take the money that he wanted to donate, but that I thought the best thing he could do for the children of our 4 officers was to keep Bruno safe with him but to keep those kids in his heart when he hugged his dinosaur. He agreed and gratefully took Bruno back from me and held him tightly as if he never wanted to let him go again.

We have seen many, many acts of generosity and kindness over the past 2 weeks. We have hugged more friends and strangers than we could have ever imagined and have mended broken ties with people we haven’t talked to for years. Yet nothing has touched me deeper, or given me more hope for the future, than AJ and his stuffed dinosaur. I gave AJ one of our department challenge coins, explaining to him that we only gave them out to the bravest and most deserving people we came across. I hope he will realize someday how much more than a dollar and some change he gave to me and to the Lakewood Police Department today.

So anyway, none of that is about Christmas, but it is about hope and love and I thought it was appropriate to share this holiday season.

I hope this letter finds all of you well and eager to spend the holidays with those you love. Squeeze everyone a little tighter and hug them a little

Why Eat Wild Herbs and Edible Plants? What Do You Get In a Weed That Money Can Not Buy?

For hundreds of years people took advantage of the medicine cabinet at their doorstep. Before the advent of processed foods and modern convenience stores, wild plants were a common dietary supplement. They were the ultimate natural multivitamin!

Often the plants we call weeds have therapeutic value. Our pharmaceutical industry bases many new medicines on the healing factors in herbs.

Why eat wild herbs?



They are power packed with phyto-nutrients, hundreds of times the vitamin and mineral density of a supermarket lettuce. Remember our common lettuce started out in the wild. Due to thousands of years of agriculture it has become rather meek and mild, compared to its ancestors.

They are free; great value nutrition.

You only need a little to reap the nutritional benefits.

Nutrient dense wild plants support all levels of health, starting at a cellular level.

What if you live in the city?
Not everyone lives in the countryside these days, with healthy spray free wild herbs at their doorstep. How can you get the benefits of wild plants without turning into a forager?


Drink herbal teas made from wild herbs, like nettle.

Eat darker leafy green vegetables whenever possible. Shop at a farmers market for the older varieties and more unusual green vegetables. These vegetables are most likely less hybridised and therefore intrinsically more powerful health wise.

Take a green powder like barley grass or Vitamineral Green. Vitamineral green contains wild plants in its nutrient dense ingredient profile.

If you do live rurally, how do you spot the good ones?

What to do with wild herbs and dark leafy greens?



Wild herbs can be juiced (the forerunner to wheat grass juice!) with carrots and apples, made into dressings or pesto, and chopped finely into salads.

Wild Weed Pesto Recipe
- This really tastes good!
Makes 2 cups
This recipe works well for many other greens if you are unfamiliar with edible weeds. Try rocket, coriander or spinach. It can also be spiced up with the addition of fresh chilli. Almost any other nuts or seeds can be substituted for the pumpkin seeds.

2 cups (packed) chickweed, puha or other mild-tasting edible weeds
1 cup pumpkin seeds, soaked overnight in water, then drained.
3 cloves garlic, chopped
4 Tab olive oil
2 Tab miso (or ½ tsp sea salt)
Juice of one lemon

1) Wash your weeds and drain well. Chop them into about 1 cm bits.
2) Place in a food processor. Blend together with all other ingredients. Adjust consistency with either olive oil (to make it thicker) or water (to make it thinner).

Conclusion on Eating Wild Weeds
So what are you going to get out of a common weed, that you won’t get out of spinach? Not less, you get more of everything! More vitamins and minerals, to feed the powerhouse in every cell exactly what it’s needs to be well. As nutrient values in common vegetables have declined, eating a few finely chopped wild herbs in your salad will top you up… for free!

Sri Yantra; Loom; Mendala; Bindu


A mandala is a plan, chart or geometric pattern which represents the cosmos metaphysically or symbolically, a microcosm of the universe from the human perspective. A Sri Yantra is a type of mandala with geometric patterns. Sri Yantra literally means loom, instrument or machine. In actual practice, a yantra is a symbolic representation of aspects of divinity, the creative forces of the universe. It is an interlocking matrix of geometric figures, circles, triangles and floral patterns that form fractal patterns of elegance and beauty. These visual patterns can have a powerful effect on the mind. Just as primordial sounds, or mantras, can be useful in balancing our mind and body through hearing, primordial shapes can generate increased coherence in our brains, creating a balancing and calming influence. In cultures around the world, beautiful visual patterns are used to quiet a restless mind.




Yantra Meditation

As you look at the yantra, allow your eyes to focus on its center. This dot in the center is called the Bindu, which represents the unity that underlies all the diversity of the physical world.

Now allow your eyes to see the triangle that encloses the bindu. The downward pointing triangle represents the feminine creative power, while the upward facing triangle represents male energy.

Allow your vision to expand to include the circles outside of the triangles. They represent the cycles of cosmic rhythms. The image of the circle embodies the notion that time has no beginning and no end. The farthest region of space and the innermost nucleus of an atom both pulsate with the same rhythmic energy of creation. That rhythm is within you and without you.

Bring your awareness to lotus petals outside the circle. Notice that they are pointing outwards, as if opening. They illustrate the unfolding of our understanding. The lotus also represents the heart, the seat of the Self. When the heart opens, understanding comes.

The square at the outside of the yantra represents the world of form, the material world that our senses show us, the illusion of separateness, of well defined edges and boundaries. At the periphery of the figure are four T-shaped portals, or gateways. Notice that they point toward the interior of the yantra, the inner spaces of life. They represent our earthly passage from the external and material to the internal and sacred.

Now take a moment to gaze into the yantra, letting the different shapes and patterns emerge naturally, allowing your eyes to be held loosely in focus. Gaze at the center of the yantra on the page. Without moving your eyes, gradually begin to expand your field of vision. Continue expanding your vision until you are taking in information from greater than 180 degrees. Notice that all this information was there all along, you just became aware of it. Now slowly reverse the process by re-focusing back to the center of the yantra. Now gently close your eyes. You may still see the yantra in your mind’s eye. The patterns of creativity represented by these primordial shapes express the fundamental forces of nature. They govern the world and they govern you.

CALL FOR A WORLD PRAYER CIRCLE TO STOP THE PROPOSED BOMBING OF THE MOON BY NASA IN OCTOBER





On October 9th NASA is planning to send a 2 ton kinetic weapon to create a five mile deep crater on the moon. They are claiming ‘this is in the interest of paving the way for colonization and “to find water”. As usual we are kept in the dark as to their real motives for wanting to go ahead with such an inconceivable and brutal action.





Regardless of their intentions, what we do know is that it is absolutely absurd to even consider such a notion and that it could have catastrophic implications on the Moon, our Earth, and all of us who reside here; and, of course, all those to come. For not only does the moon regulate our tidal flows and the menstrual cycle of our women but she also nurtures our intuition, our sensitivity, our capacity to feel, our emotions. Like us, she is a living, breathing being and like us, the pain felt from such an attack would be intolerable.





We should all be asking ‘Why?’ ‘What will be next?’ And, how far will we be pushed before we stand together and demand that this craziness, inflicted by those who supposedly ‘care for us’ stop?





We are asking all who feel to, to join together in a unified world prayer, on the full Moon of September 5th.



That we draw upon the unlimited power of unified heart full intentions and prayers in vision of stopping this proposed Moon
bombing. We intend to create a circle of light around the Earth, as we merge our hearts in prayer, and radiate this light circle to cloak the Moon with our intentions, our hearts, our gratitude for what she gives us, and our demands that she beprotected.

at the back of this little book lies some wonderful enlightening prayers. It doesn't matter what you call it, wish, or hope, if prayer doesn't suit you, but listen;

"Please take a moment to close you eyes,(ah, that's better), open your heart, and feel the love that comes from your heart.
I want you to join me with my words in your mind and in your heart, to feel very strong connection of love. Together, we are going to do a very special prayer(wish, if you want) to experience a communion with our Creator.
Focus you attention on your lungs, as if only your lungs exist. Feel the pleasure when your lungs expand to fulfill the biggest need of the human body - to breathe.
Take a deep breath and feel the air as it fills your lungs. Feel how the air is nothing but love, notice the connection between the air and the lungs, a connection of love. Expand your lungs with air until your body has the need to expel that air. And then exhale, and feel the pleasure again. Because when we fulfill any need of the human body, it gives us pleasure. Dick Greggory and a Yummy receipe.....


Dick Gregory was the subject of my last blog. I have his book;
Natural Diet for Folks Who Eat: Cookin' with Mother Nature;

Here's my favorite receipe from this book

Dick Gregorys' Always in the Soup Health Power Uplift
2 Tomatoes
1 cucumber
1 small squash
1 bell pepper
1 avocado
1/2 a small onion
1 clove garlic
enough pure water to blender the ingredients (1/2 to 1 cup)
Cut them up and blend them in a blender.
Add 2 tablespoons of honey
You can serve this delicious cold oR heat in a double boiler and serve warm

I, personally, like it warm, but it's delicious cold, with whole wheat crackers.
I don't use green pepper, and usually don't use the cucumber. You can use what part of the list you like.


There is a world of information in his book. I will add more down the road a bit.

Thank you KayVee for the Search info. This lead to my new Search feature, so you can look for specific topics. I have a long LonG way to go to make this 'my blog' more user friendly, but thanks to my dear dear friend, and a good night's conversation, there is now a 'search this blogg' search box.

Ethan Persoff has an interesting site and so does Dick, himself. He has an official site simply using his name.

I have also found one of his old books (out of print, but avaliable on Media Fire)It looks like an interesting site. I have not looked at the book yet. It's a political story about when he ran for president.
Check it out.
He was a bit into fasting over, I think, political policies, like war and such which lead him to a lifelong ambition to show people how to look at eating differently.
He was a comedian as well, if he looks familiar, he was in some movies. Stay tuned for more as this developes.

June 1st and the Midnight Summer's Dream


Ode to this beautiful time on earth.
The one where we were all birthed.
To learn from it is at all intense.
The lessons are all so immense. Unless they are modest.
To all of my fellow travelers converge.
And we'll learn from each other or we'll even merge.
To one another where we came and to where we go?
Does anyone ponder these things or say,

What of tomorrow, where will we all go?
Or does it even matter how one doth flow?
Forever onwards to what, do we know?
Do we need to identify,
Or are we all where we should already be for?

How to Get That Extra Mile From Your Herbal Medicines
With a Simple ‘Tapping’ Procedure


Having qualifications in the use of Herbal Medicine I know that herbs, these beautiful, gentle remedies provided by Mother Nature, do a wonderful job of restoring our bodies to a state of balance and wholeness, working as well as many modern drugs, but with few, if any, of the toxic side effects. Utilize the right selection of herbs and you can get fantastic results.

However, occasionally the herbs we have so carefully chosen, even intuited, don’t seem to work as well as we know they should. It’s certainly happened to me when I was in practice, and also when trying to benefit my own personal health.

A couple of years ago, I came across one of the ‘newer’ energy meridian therapies, based on the ancient Chinese and Japanese forms of acupuncture/acupressure.

Emotional Freedom Techniques, also known as EFT, is one of the more recent incarnations in the use of the meridian system. It is very simple and easy to learn and to apply. Its founder, Gary Craig, likens it to “psychological acupuncture without the needles” as you tap with your fingertips on certain parts of the face, torso and hands, where the meridians endpoints surface.

Gary’s premise is that “the cause of all negative emotions is a disruption in the body’s energy system” and that “unresolved negative emotions are major contributors to most physical pains and diseases.”

This is something that I noticed with my herbal patients, that many physical manifestations of illness appear to have their beginning, in unresolved emotional problems. Many times, in consultation, asked what they could remember about events going on at the time of, or just before, their problem started, patients mentioned bereavements or crises, etc., which were still affecting them now.

EFT incorporates an emotional element to the healing process, addressing those unresolved underlying emotional issues, and thus allowing physical healing to take place.
By tapping on the meridian acupoints, the body's energy system is gently realigned, and re-balanced, disconnecting the physical discomfort we associate with certain memories, and quite often removing the resulting symptoms.

Usually, the herbs we use work well; they are able to help solve the physical and even many emotional problems in a gentle, natural way. The body responds positively to the herbal stimulus and comes back into balance. But for those more obstinate cases, where the herbs don’t pack their usual punch, I have found that combining the use of EFT with the herbal medicine can have the effect of potentiating the herbal actions.

My belief now is that when we hit a stumbling block with getting well, to consider if there may be an unsuspected underlying emotional issue, which is effectively sabotaging any attempts to improve our health. This is often known as Psychological Reversal (PR), the principal cause of negative thinking at a subconscious level, which results in self-sabotage and doubt.

If PR is present it blocks progress and healing, whatever healing route one takes. However, never consider it as a default of character or willpower. It just is. The EFT Setup Phrase (see below) acknowledges this underlying doubt and negativity, even when we don’t know the exact details at a conscious level. When it concerns improving our health status, the underlying, subconscious emotional factor may be that we don’t actually deserve to get better, odd though that may sound.

A simple example of PR in action can often be seen in the making of New Year’s Resolutions. How many people actually keep them? Yes, we’ll quit smoking, stop over-eating, get more exercise, etc. It is logical, makes sense. But a day or two down the line you are back in your old habits. PR has struck – negative thoughts, doubts, self-sabotage. If I quit smoking, I’ll get fat, because that’s what happens to people who stop. If I stop eating the stuff I like, I’ll feel deprived and/or stressed. Exercise – I just don’t have the time.

Another thing to consider is covered by the psychological term “secondary gains”. Even though we may logically and outwardly want to get better, subconsciously we recognize that there are benefits to staying as we are. Perhaps it is more attention from the family and friends; perhaps it’s time off work; perhaps it’s a way of avoiding certain responsibilities that come along with being healthy.

As a result, whatever we do to help ourselves, is likely to be less effective. Let’s take as an example, regularly forgetting to take your medicine (guilty, m’lud!). It is surely an easy thing to leave it where you cannot miss it, to make an extra attempt to remember to take it. You may have no idea of why you are resisting doing that which can do you good, or even be aware that you are doing this.

But even if you are meticulously downing your herbs, there are still times when you just don’t get the results you expect. The subconscious can exert a powerful pressure on our body’s physiology.

So how can we use EFT to help in this kind of situation? First, you need to learn about the tapping points and the procedure to follow (see below – EFT Self-Help).
Usually the most difficult part is to come up with a Setup Phrase to cover the issue you wish to work with. This phrase comes in two halves.

The first half of the Setup Phrase acknowledges the negative issue or problem; lets your psyche know that you are tuning into the issue to work on it.

For example, “Even though I keep forgetting to take my herbal medicine, …”

The second part states that you accept yourself regardless, or that you are at least open to the possibility that you can accept yourself. It acts as a positive affirmation to neutralize any negative thinking, the result of Psychological Reversal. The default phrase that is used is “I deeply and completely (love and) accept myself”.

“Even though I keep forgetting to take my herbal medicine, I deeply and completely (love and) accept myself.”

So, in the first part, we acknowledge that we keep forgetting to take our medicine. In the second part, we are telling ourselves that despite that fact, we accept ourselves, we are not going to beat ourselves up about it.

You can do the same thing with any problems that may come to mind. For example:
“Even though I feel a bit queasy when I drink my herbal remedy, I deeply and completely (love and) accept myself.”

“Even though my herbal remedy doesn’t seem to be working for me, I deeply and completely (love and) accept myself.”

In this case, you could actually alter the default affirmation phrase to read something like,
“Even though my herbal remedy doesn’t seem to be working for me, I choose to let my body allow the herbs to do their job, to bring about healing and wholeness.”
Once you have come up with your Setup Phrase, you come up with a short Reminder Phrase (less cumbersome to speak as you tap).

“Forget my medicine”, “Feeling queasy”, “Herbs not working”, etc.

You then need to put a number (SUDS - Subjective Unit of Distress Scale) on the way you feel. For example, “Feeling queasy” might rate a 7/10, where 0 = ‘I feel fine’, and 10 = ‘I feel absolutely terrible’.

Now follow the tapping routine, starting with 3 repetitions of your Setup Phrase and either rubbing the Sore Spot, or tapping the Karate Chop point. Then you tap on each of the meridian endpoints, saying your Reminder Phrase as you go along and include the 9 Gamut process before starting at the eyebrow tapping point for the second time. At the end of this, take a deep breath. Then reconsider that rating you started with. Has it changed? Come down?

In many cases, that one round will bring about quite a change, but if you have only got down to say 4/10, then you do a repeat of the above, changing the Setup Phrase to include “remaining” or “still”. For example, “Even though I still feel a bit queasy when taking my herbs, …” with a Reminder Phrase of “remaining queasiness”.

You can either carry on till you reach zero, or feel that you have done as well as you can for now. If you find yourself yawning, sighing, tummy grumbling or with watery eyes, they can all be a sign that energy has moved, shifting emotional blocks that might underlie your current state of being. You don’t have to know what they are, but many people will receive insights, often from their early years, which may be pertinent to their issue. Sometimes it seems that just bringing it out into the open allows healing to proceed.

It’s surprising just how effective combining EFT with herbal remedies can be. So if you do find your remedy is not as effective as you expected, or you are responding a bit negatively, why not give it a try and see if it works for you too? I’d be interested to hear how you get on.

Quinoa Food Comfort. It grows on you!!!!!!!!!!!!!!





And you have to try Quinoa Muffins! Some say it is for the birds, only because it is used for bird seed, but it has protein benefits according to the info I found.
Quinoa Uses besides bird feeders

So, how do you cook it?

We used to have to wash all of our quinoa. Now Ancient Harvest produces washed quinoa, which you can also sprout.

Conventional Method:
Place 1 cup of quinoa in 2 cups of boiling water. Turn down the heat and cook for approximately 15-20 minutes.
You can tell the quinoa is thoroughly cooked when it becomes translucent and the crescent-shaped germ separates and becomes white. It looks like a little tail. After the quinoa has been cooked, remove it from the heat and allow it to rest for 5-10 minutes.

Pressure cooking:
Place 1 cup of quinoa, a dash of salt and 1 Tbsp. oil into 1½ cups of boiling water. Place lid on the pressure cooker. Bring to 8 pounds of pressure. Turn down heat to low and cook for 10 minutes. Let the pressure release naturally and you will have perfectly cooked quinoa.

Quinoa can be used for breakfast, served with fruit or with maple syrup. It can be used in a pilaf with sautéed onions and peppers. You can stuff baked potatoes with quinoa, corn and chopped peppers or chili’s. You can use quinoa in salads and even place a cup or 2 of cooked quinoa in your bread. You can also mix it with millet and sunflower seeds. You can stuff squash with a pilaf mixture. Most of us are limiting our intake of dairy products, but a little cheese melted over the stuffed baked potatoes or stuffed squash make it a very special treat.

    Makes 12

    · 1 cup quinoa, rinsed

    · 1/4 cup vegetable oil, such as safflower, plus more for pan

    · 2 cups all-purpose flour, plus more for pan

    · 3/4 cup packed dark-brown sugar

    · 1 1/2 teaspoons baking powder

    · 1 teaspoon salt

    · 1/2 cup raisins, I prefer chopped dates

    · 3/4 cup whole milk

    · 1 large egg

    · 1 teaspoon pure vanilla extract

    Directions

    1. Preheat oven to 350 degrees. In a medium saucepan, bring quinoa and 1 cup water to a boil. Reduce to a simmer; cover, and cook until water has been absorbed and quinoa is tender, 11 to 13 minutes.

    2. Meanwhile, brush a standard 12-cup muffin pan with oil; dust with flour, tapping out excess. In a medium bowl, whisk together flour, sugar, baking powder, salt, raisins, and 2 cups cooked quinoa; reserve any leftover quinoa for another use.

    3. In a small bowl, whisk together oil, milk, egg, and vanilla. Add milk mixture to flour mixture, and stir just until combined; divide batter among prepared muffin cups.

    4. Bake until toothpick inserted into the center of a muffin comes out clean, 25 to 30 minutes. Cool muffins in pan, 5 minutes; transfer to a wire rack to cool completely. Store in an airtight container up to 5 days.

Quinoa is surely a candidate for a feature cover of Time magazine. The UN already recognise it as the only vegetable source to be a complete protein. It is a seed grain, or super grain, that has the same nutritional profile as milk. It contains all the essential amino acids required for human health. No wonder NASA have it on their list as a crop of choice for self-sustaining ecosystems in long duration, manned spaceflight. Back on Earth, we’ve been eating it for an estimated 6,000 years. Well, those of us with Andean lineage have. It grows best above 11,000 ft (3,350m), in the mountains of Bolivia, Ecuador and Peru. The seeds are coated with a protective waxy covering, known as saponin, that in unpalatable, and deters birds and animals from munching. A natural, inbuilt, non-harmful pest control. This can be washed off for human consumption. Quinoa has a nutty sort of texture (I personally much prefer it to cous cous), and is said have a subtle 'crunch', resembling that of caviar. But far from that extravagant delicacy, this wonder grain is ...

... grown by poor peasant farmers, struggling to make ends meet. Inca Organics is company trying to change that. Founded by ex-Peace Corps workers, it aims to broaden the market for Quinoa, so that farm families might realise a gentler way of life. Already, with small markets established in the UK, US and Australia, they believe they’ve raised the household income from $250 to $500 USD per annum. (Ecuador set their poverty level at $360.) Inca Organics believe their organic Quinoa to be superior to most others, because of the fair trade manner, with which they deal with their farmers, and particularly due to the method they use for removal and disposal of the saponin.

Washington is the Apple State....Let's put it to use!!! Happy New Year!

I love the Blogs I follow. We are an amazing People.
Now-a-days we are up against some enormous odds.
I don't know what all is true and what might be a bit of hype, but just in case....
Here is something I just tried for the first time.
It was really cool and I wanted to share.
In the distant past I found a couple of useful books in the grocery checkout lane. One in particular (of the three useful books I have bought from the checkout lane in my lifetime)
The Miracle of Garlic & Vinegar 1996, James Edmond O'Brien. I am assuming I have the right to let you know the useful information found there in. I am not reproducing this verbatim, so.....



Making Vinegar at Home

*You need a wide mouth jar, or crock and covers.
I used a restaurant size pickle jar.
(I love the store Cash N Carry. It is like my favorite grocery store!)
*leftover apple peals, cores(I didn't use cores), bruised or soft apples that no one will eat raw.
Put the apples (cut the whole ones up just a little) in your selected jar/crock.
Cover them with cold water. Place the lid on the jar, and store in a warm place.
An amount of time was not mentioned. So, the experiment is part of the process. If this is not a pleasurable idea, let someone else do it and use your barter sense to make an exchange. Oh, I have an idea, say apples for cider vinegar?

Occasionally lift the lid and add whatever additional cores, peels and pieces you can. Strain off the froth as you go along. When you can smell the vinegar smell and it tastes right, strain out the apples and pour the liquid into a sterilized bottle and cork/seal for future use.

Aeration is the key to souring a vinegar. If you want to quicken the fermentation process, add a small amount of live yeast in a brown paper bag to your container (I did not, it is as quick of a process as anything, as is).

To aerate as farmer once did, keep two barrels with spigots. In one barrel, make the vinegar as described above. In the other barrel, keep matchstick thin sticks of birch or beech boards. After a few days, open the faucets and allow the cider to dribble through the birch or beech boards.

As soon as the second barrel fills up, pour the vinegar into the first barrel again. This process may be repeated several times.

Banana This; Recycle Old Peels~ fertilizer or silver polish

There are things you can do with that old peel.

1. Do you have a green thumb? House hold plants and outside gardens require fertilization. A great way to give your plants nutrients is with a banana peel. The banana peel is very rich in potassium and phosphorus, which give that added boost to your plants soil, especially so with roses. Here is how to use a banana peel to fertilizer your soil for your plants. Remove the peel from the banana. Place the banana peel on a cookie sheet to let it air dry. Grab a paper bag or envelope. Crumble the dried banana peel and place it in the bag. Let the banana sit at room temperature for about two days. When your caring for your plant, give it a potassium treat of crumbled banana peel. Mix well in the soil to ensure the roots are fed evenly.
2. Have you been thinking about pulling out that old silver? Well there is no time like the present. Bananas peel can also be used to polish silver. Yes, polish silver. Take the old peels and place them in a blender. You want the peels to become smooth and creamy. Once they have, grab a cloth and small amounts of the creamed banana peel and begin polishing your silver. The shine will be breath taking.

SOURDOUGH STARTER with WILD YEAST

SOURDOUGH STARTER with WILD YEAST
Wild yeasts exist in the air around you and to some extent on the wheat berries. There are wild yeasts on grapes (unsulphured) and apples and other fruits. It is those wild yeasts which are 'captured' to make a sourdough starter. The process takes from 3 to 5 days. I wish I had specific amounts for you, but you could start with 1/4 to 1/2 cup of flour and mix in enough warm (not hot) water to make a thin paste. DO NOT make it too soupy. That, in fact, is the trick to a good starter, according to the French bread makers, and I think they should know. And after you've fooled around with the flour and water thing, you might wish to branch out into adding those unsulphured grapes, apples, sour milk, etc as a catalyst in order to capture other strains of yeast. Each of these strains has a slightly different taste. In fact if you move to another area, you might end up with a starter that produces an entirely different flavor. For instance, San Francisco sourdough bread is well known and has a distinct taste due to the wild strains in the air there. On day one you mix the flour and water (and add any catalysts to encourage fermentation) and place in a warm spot. After 3 days, the dough should be moist, inflated, and slightly sour. More flour and water is added (mixed in) and left to sit in a warm spot. After 2 days the process is repeated. Then the next day it is done again. Note the order: 3 days, 2 days, 1 day. At this point you should be able to make a loaf of bread using part of the starter and adding back what you took out in the form of more flour and water. Rule of thumb: Use about 10% starter to size of loaf. In the case of a 2 lb loaf this is a bit over 3 oz of starter (3.2 to be exact). For a 1 lb loaf 1.5 oz would be used.
